Caramel Flan de Leche

A classic favorite that is usually very difficult to make. Using an Instant Pot® makes this easy to cook, and helps you get perfect results every time.

TOOLS:

Instant Pot
Steamer basket or trivet bottom
Medium-sized heavy bottomed pan
Silicone heat-resistant spatula
Sieve
Mixing Bowl
Measuring Cups
8 custard cups
aluminum foil and plastic wrap

INGREDIENTS:

Caramel: 1 cup Sugar

Flan:
3 Eggs
14 oz Sweetened Condensed Milk
12 oz. Evaporated Milk
1 Tablespoon Vanilla Extract
1/2 teaspoon Nutmeg

DIRECTIONS:

Place 1 cup sugar in a heavy-bottomed pan and place over medium heat. Let melt until the mixture becomes an amber color - Do NOT stir- if necessary swirl the pan to cook evenly. When ready take off of heat and pour a small amount into the bottom of each custard cup - just enough to coat the bottom. Place cups aside and prepare the flan mixture.

To prepare the flan, mix the remaining ingredients together and press through a sieve.

Pour into Caramel lined custard cups and cover with foil.

Place 1 1/2 cups of water into the bottom of Instant Pot®, place the steamer basket pot and place custard cups on top of that. Using the manual setting, set it for 5 minutes, and when finished cooking, use the natural pressure release to finish and open it.

Take cups out of the pot and let them cool. Remove foil and cover with plastic wrap. place in refrigerator and cool for at least 3 hours or overnight.

When ready to serve remove the plastic wrap and place the bottom of the cups in a bowl of very hot water for a few minutes. Using a knife loosen up the edges of the flan at the top, then invert it onto a serving plate.
