Lazy Cook Spicy Chicken Soup

I love fresh, healthy meals, but that isn’t always possible. We had been snowed /iced in for two days, and it was time to raid my pantry to see what I could cook up.

Fortunately, I had gone to the store before this started and got a Costco rotisserie chicken to make some chicken and rice for my older and feral cats. It is super easy to make in my Insta Pot, and before I started cooking for the cats, I cut off some of the breast meat I could use for myself.

Ingredients for Spicy Chicken Noodle Soup

The other day, I saw a product that was new to me - Spicy Chicken Broth by Swanson. I thought this could be a great choice to make some quick and easy Chicken Noodle Soup with a kick. The best part is that it can be made in one pot and takes less than 30 minutes to prepare!

Spicy Chicken Noodle Soup

ingredients:

1 cup cooked and diced chicken

8 0z Egg Noodles

2 cups frozen vegetables (I use Path of Life Garden Vegetable Blend)

4 Cups (1 box) Swanson Spicy Chicken Broth

Salt and Pepper if needed.

Directions:

In an 8 quart pot, cook up egg noodles, drain, and set aside.

Using the same pot, saute vegetables until they are cooked. I use a little of the noodle water to help them cook.

Add diced chicken and broth, and cook until bubbling.

Serve and enjoy!

Lifestylist Tip: If this is too spicy for you, just add some regular chicken broth to make it less spicy.
